A new stage for the artistry of Head Chef Chiharu Takei, who has in the past also served as head chef at mikuni Marunouchi and arcana izu.
Firm in his belief that cooking should be based on local production for local consumption, Takei has selected the ingredients himself,
travelling around the Kyushu region visiting producers.
Drawing inspiration from the natural wonders of Yakushima, the dishes he creates are entirely unique to sankara.
